Laser /cnc mill out some sheet material > jigsaw any day!
But if your going to the expense, defo get some of this stuff, phenolic ply, or birch of you really want nice. £55 a sheet, it's more than enough for one cargo bike floor, front and rear panels and some sides. If your super savy with design a kid bench seat too. Similar stuff to what's used on moderate duty trailers for vehicles, anti slip/grip tape with self adhesive backing will attach to it very easily too.
