The majority (if not everything over -3 hose) of AN fittings are anodised aluminium.

I've only really seen steel ones for brake lines specifically (-3 hose)

Have had a bad experience with anodised fittings corroding. Since that experience I have only ever bought stainless fittings (yeah ducati performance lines are just steel) from think automotive or pritek.

I've used the anodised aluminium ones for various motorsport applications for probably the past 20yrs and had no obvious issues.
