The easy cleats unclip with less twisting of the foot. On a brakeless bike I found them too unpredictable. They're kind of the 'beginner' cleat, which is why they provide them with the entry level pedals and not the higher end ones. If you compare the two the easy cleats are basically like an already slightly worn 13/17 cleat. Hence why they unclip sooner.
The 13/17 are 13deg or 17deg depending on which foot you put the one with the star. I always had them set to 17deg.
But the actual 'easy' cleat is only 10deg, so unclips much earlier.
