Don't 'deleted' emails remain in Trash for 30 days, in default settings?

They do, but Trash is empty, and some of these are +30 days

Did you delete them or ‘archive’ them

Gmail I think by default just removes the inbox label. Could be you’ve got the desktop config set to delete and the mobile set to archive
