Well I don't think I knew this thread existed
So I'm gonna add a sandwich I posted about in food thread a while ago
Big slice of leftover homemade fritata (Potato, Cheese, Peppers and Onion in this case)
on a Brioch bun, garlic & herb dip from a leftover Domino's (or equivalent supermarket squeezy bottle style), and Frank's yellow hot dog mustard. With a big plastic cheese slice whacked in. Plus Tabasco Chipotle all over the joint.I've made fritata since just to make one of these afterwards

recently discovered Deli Kitchen sliced focaccia, and they are pretty decent.
I've been filling with Scamorza, mozzerella, cheddar and salami, and then whacking it in a dry pan to crisp the bread and melt the cheese.Tasty AF

Yesterday for me was pork mince with fennel seeds and garlic fried until there are some nice crispy bits, then mozzarella melted on top. Served on Mrs c00ps' sourdough with mayonnaise, defrosted leftover homemade BBQ sauce and hot sauce with a few thin slices of red onion. (edit: oh, and some beetroot slices - not pickled)
(this was going to be a pork burger, until I broke it up by poking it too much in the pan)

Jamie Oliver has a recipe for sausage meat ragu (jool’s pregnant pasta or something) which involves fennel seeds and balsamic vinegar with the sausage meat. It’s great. It’s a hit with everyone I’ve cooked it for. Your thing sounds great. I wonder if it would stuff into something

Back down to earth with an egg banjo today (what my grandfather used to call a fried egg sandwich with a runny yolk - assume it was an army thing...)

Home made spelt and rye bread, goats yoghurt and mustard on on piece of bread, Mayo on the other slice of bread, filled with thinly sliced gherkins, leerdammer cheese, and grated homemade biltong. Approaching salt beef or pastrami on rye, it has become a new favourite in our household.

Soft bap bun, prob something multigrain, or a scottish morning roll. Tuna flaked up, or tuna mayo, big slabs of beefheart tomato and then a 1 part tuna to 0.5 part ratio of small chunk branston pickle. Looks an atrocity, tastes like win.

Todays lunch will be bacon and stuffing sandwich
Homemade tartar sauce, Kimchi and cheese on lightly toasted bread.
It was a gamble but it paid off
