I could and may well. But I'm partly drawn to trying because I have some kit and don't just want it sitting around when I'm not working. Good to stay in practice etc.
Experimented further with Voicemeeteer today and am sure I don't want to go down software route. Too much restarting required and still can't get what I want exactly. Probably end user idiocy but I don't have the time to figure it out.
I've seen a fairly promising video of the GoXLR Mini in use which seems like it'll be spot on - a very idiot proof approach to routing which means I may even be able to use it for jobs from time to time.

OBS sounds like basically exactly what you want. It's extremely powerful.
It doesn't interfere with your audio routing in the way that Voicemeeter or some other virtual audio device solution does, it's parallel to whatever your typical setup is. There's no need to change anything on your end.
It will also give you a lot more configuration options than anything in hardware.
If the Logitech headset is a multichannel device then that might be difficult for recording in hardware. Why don't you record using OBS?
