Remote temp probe has yet to arrive so totally winging it, so to speak. Trying to keep the ambient temp probe (which is near the bird) at or a little above 180 and cooking like I would in the oven. "Can" (it's a stainless thing I got off eBay that you fill with whatever) is filled with Punk IPA, for the craic. Rubbed thoroughly with Old Bay.
