Taping it's exactly how I'd do it, and I tape a lot of bikes. As for the steerer, all new bikes are designed like that.

Barely an issue. What is an issue is Snipping hoses with those side cutters.
Also...use some fucking gloves, DOT is nasty stuff, followed by a blast of alcohol...then more grease. No idea what it is with mechanics and crusty hands.
Also, is grease on ration? Considering that fuck all sealing there is on bearing points these days, pack some more in there.

Carbon steerer tube but no spacer above the stem, handlebar tape facing forwards on the tops... Those are pretty rookie mistakes, no? Always surprises me with these kinds of videos.
