Cotic Solaris MAX is sounding best suited so far. Then either run 120mm forks with lighter tyres or 140mm forks with chunky tread, depending on what you're doing

No idea! As far as I can tell it means 120 mm travel. Then 140 mm must be trail, 160 mm enduro, and beyond that who cares?
Just buy something. Then realise in 6 months time you should have bought something else.

Enduro & Bikepacking?
I think I kind of did that once, on an overnighter when my route went past a bike park that was closed after the season so I rode down a few of the trails with the bags on the bike. I don't think it is a thing really though.
