I've just build up a pair of fixed wheels with 700c Exal LX17 rims (from Spa cycles). They're a little heavy (585g ish) but strong. And round. Very easy to build-up.
I like that they have eyelets (for getting good tension with my rookie wheel-building skills) and wear indicators (nice for a hack bike that'll get ridden in the wet and dark with little mechanical attention).
