Because we can live in a large 3 bed house with a kitchen, living room, dining room and big garden for under £200k

I can get work up there for basically the same salary as here and it's under half an hour drive to the Dales or the Peaks let alone a bike ride out into the countryside. I could cycle in to the city for work or use a motorbike because parking exists and there isn't rampant theft.
We need somewhere bigger and want more space, there isn't an equivalent for staying in London, we could get a 2 bed smaller house maybe with a garden in somewhere like Romford for min £320k with a 1 1/2 hour commute each way as well as £2k for a season train ticket. So why spend 3 extra hours a day doing tube & train & bus for somewhere that costs nearly twice as much per month just for the mortgage let alone transport. We also looked at getting a bigger house around Hemel Hempstead but then it's £5k for a season ticket as well as the commute time. Also my partner is going to do a career change and there's a good chance there will be a while that we'll be living on only my salary, much easier to do when it's under £1500 for mortgage+bills rather than nearly that for just the mortgage.
