They wear like cheese though. Also had two tubeless fails on them with weird long splits along the top seam. Needed orange seal endurance formula because Stans didn't seal it.
Now they don't seem to sell in 2.1 by 650b anymore either, so I'm using Maxxis Crossmark 2s ... Hang on, I lied ... I bought a MTB and put 40c X 700 back on the wolverine.

with the caveat that it's recommend to pair the GRX chainset with the GRX front derailleur
More than a recommendation from what I understand. GRX has a different q factor therefore it won't work with road FDs

If only shimano had used the same pull ratio for mtb and road like sram so we could have just picked and matched instead of having to deal with grx.

They've got X actuation and Exact actuation now, but think it's just the Eagle types they aren't cross compatible. The MTB mechs don't have barrel adjusters though so you need to fit one somewhere in the cable run.

36x28 is my lowest and it looks like I'm on the 21 or 23

Plus you can end up with annoying cable routing situations like I have (X9 rear mech on Hook EXT-C), and I'm not totally convinced that my occasional front shift problems are not caused by the mega powerful spring in the rear mech. 10 speed sram mix n match is still the best though.

I recall swapping out my 32 cassette for a 34 then realising it was already a 34

I’ve got around about nothing to add to this thread* other than I’ve been loving my gravel bike for the past 2/3months whilst waiting for my new mtb to arrive.
*and a needless photo or two of my bike that is fucking great!

I had 36T and fitted 42 and now I've bought a sub-compact crank to drop front from 34T to 30T
It does depend entirely on what you're riding though. Obviously flat bridle ways I'm still running 58x11. -

I stuck to my 11-40 for winter as I do need that 40-40 from time to time, although 95% of the time I'd be fine with a 11-34 as you say
Probably have eyelets for bottles on each leg.
