When we bought our run around Subaru it had rarely been cleaned and stank of the previous owners Jack Russels.
I vacuumed the shit out of it and then used one of those door grenades, left the engine running with the heater/blower on recirculate full chat. It worked really well! Although the scent from the grenade was pretty strong which improved in a few days

You can get 'odour bombs', where you have to close the bomb in the car, set it off then run away...
Never used one, but sound intriguing.
