I think two pedals is a sufficiency of pedal tbh. Challenge is that the brake pedal needs to move ~70mm to the left, which means modifying the metal lever-arm. I'd prefer to bend it rather than cutting and welding, but then I think it would place the pedal-pad up too high.
The throttle is a self contained unit that is located with two bolts - provide two new threaded holes ~100mm to the left and (as long as the loom is long enough) Bob's your uncle.
