Yeah the teide stuff is definitely a joke. However my folks did stay at the parador when it was snowing once.
Anyway the thing to do IMO would be hire a good road bike and get some miles in. basically constant climbing.
That's an aside. Onto skiing, scotland for sure, but it depends on what sort of winter we get. Last season was a wash out so more of the same and there will be a lot of disappointed people. My advice would be to aim for glencoe or nevis range.
