• The trick to one knuckle rice measuring is that once the water starts to boil, you take the lid off, lower heat to simmering, and once all water has evaporated, you turn off the heat and put the lid back on for 5-10 mins.

    At least this is the way my Indonesian great-grand mother taught me how to make rice when I was 6.

  • alternatively, wash rice, fill with cold water to knuckle, put on medium high heat to boil with lid on, as soon as it boils take it off the heat but keep the lid on, wait 15 mins.
