I don't understand his stance on this one. If your vessel has a larger diameter, "one knuckle-depth of water" is a lot more water than if you're using a smaller-diameter vessel.

TL;DR get a rice cooker.

Same depth of water above rice as depth of rice, whatever diameter and amount of rice.
