Maybe this is balls but I'm never quite sure about steel stems on carbon steerers given torque requirements. I guess you'd be ok with the dual bolt on the Nitto but not sure how comfortable I'd be with a single bolt steerer clamp at low torque settings. From recent experience it doesn't take much over 4nm to pinch carbon, especially with the sharper edges on steel stems.

Did you pinch the carbon steerer or carbon bars? And doesn't a steel stem kinda cancel out a full carbon fork? I feel like alu is the way to go, i think the alloy reached its full potential as a material for stems and San Pelligrino cans

Why would the clamping force with a two bolt be any higher than an aluminium stem? Perhaps that's not what you were inferring. Not sure I'd describe them the Sim Works (Nitto) stem as having 'sharp edges' either. In fact, they're positively smooth.

Eriksen Sweetpost inbound from eBay for not much more than the J&L. A couple of minutes with a Scotch Brite pad and it should be as good as new.
I took a trip down to Del Mar to visit Summer Cycles again yesterday to talk over the frame drawings from Seven but unfortunately Craig had an emergency to deal with, so we hung out at a dog beach in San Diego instead:
Either way, the frame drawing will be probably be approved today over Zoom which means production will start almost immediately. Very stoked for this. I cannot wait.

Well. Spec signed off. Barely any changes made. I’ve also ordered a Praxis Zayante crankset as per the picture below. I love this R7000 group. I honestly think it’s amazing, however the cranks are a little ugly. I think for $300 inclusive of the bottom bracket, these are a good value. I particularly like how easy it is to change chainrings. For example if I wanted to spend a week riding in the mountains here, whacking on some sub compact rings and moving the front derailleur down is very easy.
Final drawing below too. It’s representative of the real dimensions at hand. I’m happy with the proportions.

Although if you buy a 105 groupset and then upgrade the cranks to Praxis aren't you getting close to Dura Ace money?

I think I paid ~400 USD for the group landed at my door from Merlin. Ultegra was just under twice that but DA was still over three times as expensive.
I’ve had the 105 group for a couple of months now on the steel Seven, anyway. It’s superb.
@Cupcakes hard to say. Within 4 weeks for sure. Probably closer to 3 but maybe even quicker. It’s a straight forward frame that they like to sneak into their build queue as it helps them hit their production quota. Apparently.

I fitted the Kent Eriksen post to the steel seven. Man. What a difference. A lot less road hum coming up to the saddle. Really took the sting out of things. If that’s what a post can do, what will a whole frame do 😱

Seven has been built and is in California. Should be at the shop tomorrow and maybe built up by the weekend. Maybe.
Final bits that I now have are these Kirk brass barrel adjusters and Sim Works by Nitto Misirlou bars.
Still figuring out what to do from a wheel perspective, but I will probably just buy some nicer tyres in the mean time. The Schwalbe Pro One's are fast but I don't think they're very nice to ride.
