  • Thanks the brass will age well though. They really know how to make a knife in Japan mine was really cheap but it's wicked sharp feels solid dispite it's simple design.

  • How long do the diddy stones supplied with these kits actually last?

    I'll try and search the thread to see when I bought mine (prob 2016).

    The corse stone is now starting to noticeable wear. But in fairness I've used it to re profile(?) blades - ie put an edge on things with no/little to no edge. That also shows an advantage, as usually you wouldn't bother having 4-5 grades of stone.

    The others still have plenty of life, but I'll check and see if I can post a pic for wear at lunch.

    As I said before once you've been through all your knives then it's mainly maintenance.

    A proper stone undoubtedly lasts longer and if you work in catering* and need to sharpen knives on a weekly basis it's probably better.

    *although when I worked in a kitchen the chefs used a steel quickly and regularly throughout the day - which is why I've always done it.

  • I’d prefer a heavier cleaver. Less effort passing it through veg.

    It’s quite sharpe but I’m not great at sharpening blades

  • Do you need to flatten the stones from time to time as per a regular stone? Or does the set-up mean that isn't necessary?

  • Just ordered a Shibazi F208-1 from Aliexpress.
    Seems to get good internet reviews due to its 3 layer steel.

    Do want to get one of the 24.5cm cleavers though. I reckon it would snap satisfyingly on my magnetic knife rail...

    I bought mine at ~4yrs ago. I was away for one of those years. Here is the current state of wear. Corse/left to fine/right.

    As I said I use the corse for shaping things. I find that you tend to use every other one more - if that makes sense?

  • Interesting. You can’t get a good edge with a dished stone if you’re hand sharpening, but if the knife is held more or less perpendicular to the stone, as with this system, it must matter less.

  • The reality is I can almost never go the whole length of a blade.

  • Inspired by his tool-rolls I asked @moocher if he'd make a knife-roll for me and I just wanted to post in here as imagine it might interest some of you. Made from an old sofa, hand stitched to dimensions of my request, finish and quality of material feels really solid. I wanted something I could put my main useful bits in when renting a place/going on holiday etc...

    Price is also incredibly reasonable. I'm so pleased I'm now ordering a washbag from him!

  • I take a Lanksy Blade Medic with me to put a temporary edge on any Airbnb knives.
    Though when the only thing that is supplied is one of the shitty bendy bread knives...

  • Coming in completely green to the topic here, but any recommendations/advice for a quality scissor sharpener?

    Would be used regularly for fabric scissors, from a few inches to 10” shears. Some can be disassembled and are the weighty, quality tailors type, some the cheaper rubber handled type.

    I’d probably be doing the sharpening, and consider myself relatively competent(!) at this sort of thing, but if there’s a no-brainer approach, perfect.

    Cost not critical, will pay for itself over time, plus in terms of speed & accuracy of cutting.

    Any pointers - manual vs motorised - gratefully received.

  • Scissors are dead easy to sharpen if they get dull from a lot of use.
    You tube videos show just how simple it is.

  • Has anyone taken the knife sharpening class at Kataba in Pop, Brixton? Was thinking about it as a birthday present for my brother. I'd like it to be a fun experience as well as learning something useful. I fear I might be falling in to the trap of getting someone a gift I'd like myself though, ha ha.

    Edit: Kataba aren't taking bookings for classes so bought him a voucher for the Blenheim Forge class.
