Is there any way of accessing this data or knowing how many of these stations are present?
Send an FoI request to TfL. There are a few that were installed by boroughs, too, e.g. Hackney has, or used to have, one on Goldsmith's Row. That data would be held by the individual boroughs, and I suppose you could send template letters to them, too, although you'd mostly get 'no' back as an answer to the question whether they have any counters.
Be warned, though, that it's fairly useless, low-level data. Movements along individual links tell you virtually nothing about the network.

I have noticed on several cycle specific routes in London there are counters to monitor the amount of traffic each route gets.
Is there any way of accessing this data or knowing how many of these stations are present?
Working on a project where I am looking to see the most used cycle specific routes in London.
