You could get away with it. Depends what you are doing with it. Mine's a dad and lad commuting mule in medium - I'm 5.8". Feels spot on for general dad and lad muling and commuting duties. I'm borderline T-Rex with a 32" inseam.
You'd need a longer stem but if you are long torso shorter legs then it might be better if you want to ride it super hard.

Yeah, I get what you mean, bike may still be rideable if one size smaller but the fit end up closer to a race fit with lots of seatpost and slightly longer stem.

I know a couple of guys who do good mileages on road, are are 5'7" and ride S Arkoses with a more road-orientated set up.
