Haven't watched the latest Better Call Saul series yet, but the last one got so slow moving and soap opera-ish I'm not in a great rush
I rushed and was not disappointed.
Slow is good. Last season ramps up towards the end -
Slow moving was what they did in Breaking Bad, too. Then you get to a point where things change very quickly and you realise almost every detail in the last X episodes was building to this.
Also, the details that weren't part of the plot are often gems. Like a German-American food franchise called "Luftwaffle".
The latest series moves a hell of a lot closer to Breaking Bad and isn't slow about it when it finally happens. Also Luftwaffle.

Just finished season 1 of Ozark. Really enjoyed it, though it absolutely wouldn't have existed without Breaking Bad. Love Laura Linney and that they're not scared to kill off my favourite characters.
