I’m guessing you cooked that in the oven, if so can you tell me what temp and for how long? I can never get it right so always pan fry on the griddle.

No cooked in a pan.

I had it in the sous vide for 2hrs at 50c. If I didn’t have a sous vide for a steak this size I’d probably look to reverse sear it

Thanks, I tried the reverse sear once before and ruined a good steak...,
