Think you're bang on the money there. Lightweight steel frame, carbon fork, 32mm tyres and discs/rim brakes I'm not bothered sounds like a winning combo.

I think hydro disc is 100x better than rim brakes, but calipers definitely “add character” and are adequate on a summer bike. If I was going full custom (this frame was one that a customer never paid for/collected that fit me) I reckon I would go disc (I’m heavy and Yorkshire is hilly) the ride is a perfect balance between my gravel bike, and my old donohue road bike, (all 3 are 853 with carbon fork)
I genuinely expect this will be the last project, aside from adjustments to existing fleet I’m set. So happy I finally have your approval
