I've only recently discovered his channel and am still working through the back catalogue. I know he's put in a lot of graft to get there but his current set up "I only do the stuff I find interesting and let other people run my business" is the stuff dreams are made of!
I don't really get the whole power carving thing, yes it's quicker but things go matchstick shaped in the blink of an eye. Plus as far as I can see it's problematic using what is essentially a plane blade spinning at 1000s of rpm with a guard so a trip to a&e could also happen very easily!

Sorry for derailing the thread on a guitar building / Ben Crowe detour. He made a lovely guitar called 'Clarity' - I think it was one of the last things he did in his shed. Carves the top with one of those disks about ten minutes into here:

Like you say - it's lunacy! Even if you're skilled with those things, I imagine you still run a reasonable risk of massively messing up a very expensive piece of wood :)
Yes - I think he became a bit of a convert to doing guitar carves with hand tools the past couple of years. I guess having the luxury of time to do it once his business got up to speed helped a lot.
His early videos (before the tool porn wall - back in his shed) he used to attack almost everything (guitar bodys and necks) with a grinder with a flap disk on it. It was all a bit stressful to watch at times!
