My assumption was this was corrected for. I can see your point now.
I just went from 16mm internal width rims to 25mm, on a 90's frame. No issues. Canti stud spacing must've been enough to accommodate for that I guess. Or the brakes themselves.
From my experience, the wider rim, such as the H+Son made the brake arms sit angled down, even with the spacers swapped around to the narrowest setting. Changing the rims to narrower ones allowed the arms to sit better and work better.
