What's the correct procedure for fixing a tubeless puncture on the road?
Shout at it. Rage it back to airtightness.
Failing that, check out the hole. Is it tiny? If so dump that mini bottle of sealant you had in your pack in through the valve stem, put the core back in attach your pump, and with the hole at the 6 o'clock position pump away.
Big hole might require a worm, or in a pinch, rubberised superglue can save you.

Thanks will invest in a worm thing. Main issue seems to be the tire dropping off the bead, which is then impossible to re-seat.
On the tube front, I did try to remove the tubeless valve to stick a tube in but it didn't budge and I didn't want to bust it. Assume you just need to whack it to get it out? This is on stock Giant tubeless wheels.

Disc brake cleaner. That's isopropyl alcohol/get rid of sticky shit stuff spray isn't it? Can I use that to clean rims pre tape install?

what tyre/rim?
Some will drop off, some wont. I have found my dt swiss rims really good, even the road ones. I used to carry co2 for this purpsoe, but stopped as i don't really need itYeah the valve will have got a bit glued with sealant, just use a bit of force.

Have gone over to the tubeless side after picking up a pair of hunt 4 seasons off ebay. Seller said he had to deflate the tires to fit everything in the box. They arrived yesterday, lots of sealant having leaked out (into the plastic bags they'd been put into fortunately). Tried to reinflate with a track pump but all I get is a lot of sealant bubbling out from the rims and a deflated tire at the end of it. Do I need more sealant? A better pump?

As I understand it, they should basically seat without sealant (but without sealant they may lose pressure over time)
So if they aren't going up, you might need to employ some techniques listed up thread (possibly incl getting a better pump). I don't know if just "adding more sealant" will help getting the rims seated.

I'd discombobulate the whole lot, clean everything, maybe re-tape the rim, try again, new sealant etc.
Don't want someone's sloppy seconds.

Pump harder until you get to the max psi for the tyre, if you can't do that, better pump

I fitted a pair of G-ones to some dtswiss rims last week. Put them on with floor pump.
Tubless does not need to be a ball ache. Just some tyres and rims are not good.
