Depends on the bend I guess, but setting them up the trad way makes for a shorter, straighter run with likely better shifting.

- Cables and housing need to be really long
- you can feel the cable when you're in the drops
- can be difficult to route past levers in a comfortable way
- difficult to affix the end of the tape whilst trying run the cable underneath at the same time. You'll probably have to tape it depending on your shifter
I wouldn't say they're good reasons though

You'll need tandem length inner for the rear, apart from that, fine.

No reason why not other than feeling the odd sensation of the housing on the drop.

Running bar end shifter cables completely under the bar tape, any (good) reason why not to do it?
