1cm could be filled with strips of oak and glued in. Filler for smaller gaps. Maybe get a couple of quotes from flooring specialists? Would be a shame to rip that out. Sanding/filling and refinishing period flooring is very in, you shouldn't have difficulty finding local tradesmen who could do it for you.
