I could not explain why as I have no answer, but I've been binging the same kind of stuff lately (though erring more towards solo/hand tooled cabin style builds in the middle of Canada rather than stuff with staircases).
There's also a channel I found from the UK the other day (TA Outdoors?) showing two guys, one slightly older, doing things like Saxon style houses (half-buried into the ground/wattle and daub walls/thatched roof etc) which was interesting. Also because they would stop to make a fry-up seemingly every hour, which is my kind of work. I usually play on mute at 2x speed which makes any voiceover more palatable - particularly as with a lot of US/Canadian ones there's usually some pretty heavy god chat.
