Put it this way, can you tell the difference between a 2.25" and a 2.6" on your MTB? Because I reckon in terms of pressure, traction, etc. that's a smaller change than going from 47mm (= 1.85") to a 2.2" on a gravel bike

Absolutely. 2.25 is an XC race tyre. Anything bigger and you are in to huck-to-flat territory.
