For simple meal prep we do a similar set of things.
Sunday night the oven gets filled with two racks of tofu/ veg sausages/ whatever I've found that looks interesting, coated in smoked paprika/ herbs/ olive oil/ pesto/ whatever I've made for sunday lunch.
Then two trays of veg- usually sweet potato/ butternut/ mushrooms- pretty simply oiled up with salt and pepper.
Then this + salad + dressing from night before goes into a wrap each evening.
(if I'm feeling really good I'll make Socca(chickpea pancakes) for the wraps.)Then the best bit- snack is pumpkin bread or black bean brownie, again cooked at the same time as the above. It makes for a hectic 2hrs around sunday lunch but then all lunches and some dinners are prepped and ready for the week.
Anyone got suggestions for good stuff to put in a wrap? I'm fed up of the same few things for lunch every day!
