2.5" Rain Kings, swapped out to 2.25 to get rolling again (race)
If your rides going to be muddy then 2.25 may be winners and save the frame and fork brace from being very highly polished by the grinding paste from the packed out tyres :)

E-25 is e-bike 25kmph approved or some other German nonsense, but that's the one I'm planning in buying, yes.
Not that that makes it a cross country tyre. Double Hans Dampf is a reasonable option as well.

MTB compounds are fucking shit. Usually I just give up and buy the first correctly-sized cheap thing.
Someone should make a nice comparison tool perhaps. No mortal can pick the optimum for their needs when there's 5 manufacturers each with 17 versions of their 9 different tyres.

I had the bike turned upside down for a few days whilst I buggered about with wheels, putting it back onto it's wheels and both front and rear brake levers are going to the bars unless you pump them a few times - is this normal?

Largely, yes - any air that was hanging about in the reservoirs has now migrated in to your callipers. Expect brakes to be shit for a few runs until gravity migrates the air back.
Ideally there shouldn't be any air but it's an open system so it's difficult to get rid of all of it.
To prevent this in future toe strap the leaver to the bar with either the wheel in or the bleed block before upside downing the bike.

That used to be a quirk of some systems years ago.
General form was a few pumps to reset everything, if brakes returned to normal then a system quirk.
If the brakes don't return to normal but feel spongy/soft then a rebleed as air is in the system.
