I now have a full array of stones, from 160 grit to 6000. Yes, completely overdone it but I like to try stuff.
I also purchased a 20 degree angle guide.
The angle guide gave me a bit more confidence to work a knife on course stones. However it introduces a risk of pivoting the knife over the edge of the stone, which is instantly bad.
Once I'd got a reasonable bevel, I went back to free hand and got pretty acceptable results.
I have two sharp knives now. I haven't tackled the concave Henckels yet, that's the next thing.

I like to buy from Dictum / Dick Tools. and not just for the name.
I've bought some of their lower priced japanese knifes for gifts and they have been very well received.

Looked at the website and they do some nice knives:

Note the ferrule is plastic on that one. I like a horn or wood ferrule though they are probably less strong.

The loop is for a strap. The others end of the loop is a cutting hook, for gutting fish & small animals I think. I hope I'm never hungry enough to need it.
