The disc rotor is attached to the hub.
The rim flexing isn’t going to cause the rotors to rub in the callipers.
I’m guessing the QR isn’t tight enough or the frame/forks are flexing under heavy load.
Of course - as I was writing I was wondering "but maybe it's different with discs." Now I know.
