I have a 23mm rim with surly hub and crap wheel in front. I want to use the front wheel as well.

I bought a trek crockett and use it 3 times. Even on the singletrack with the steamroller.

Actually looking to build something timilar to this.
Black wheels and rim breaks, I guess the they will go metal/silver with time or is there any wizardry to avoid it?

No wizardry. Just new! The front is already starting to wear a bit (50 miles in). As @Heldring says, carbon rims are pretty much your only option to avoid it.

Bit of wabisabi is fine with me though.
