very nice. what's the notch at the base of the blade for? or is just aesthetics?
-
• #2229
I think its called a Spanish notch. I only use it as its easier to avoid scratching up the rest of the blade while sharpening, although I think it was originally as a blade catch for knife fighting. I won't be knife fighting.

Coward.

How dare you. I challenge you to a knife fight!
-
• #2232
That's more like it!
-
• #2233
Isn't the notch just an easy way to separate the blade and handle?
-
• #2234
That's all I use it for.

I've been going down a rabbit hole of intrigue in bladesmithing recently. I'm particularly fascinated by damascus, are there any forumengers making their own? My biggest query is would it be mad to try making my own without a powerhammer? Would it just be a thankless task of self indulgence or could I expect to get good results?

Same.
From what I can see the benefits of the power (asides from the obvious) is in having the right amount of force, consistantly applied, to prevent any delamination and to help create a uniform shape.
My gut says with the right technique and a strong enough arm you'll be fine.
Imo YouTube knife making is a bit like YouTube carpentry - it's often dominated by wealthy Americans with all the equipment, teaching you how to DIY... but only every with all the equipment.

Went to a solid stock removal course last year with Graham Clarke.

Not cheap, but highly recommend it. Considering you get a lovely knife at the end. I'd say it was definitely worth it.

Do they have webshops?

Would anyone be interested in a set of Masterclass knives (fully forged, full tang, 3 rivet handle). I've recently acquired some Wusthof Classic Ikons and my old knives are redundant. They'd make a great set for a son or daughter heading to Uni or anyone in a shared flat that wants good knives but not precious knives...
Can sort some pics if there's interest
Set includes
20cm Chef Knife
20cm Carving Knife
Boning Knife
Utility Knife
Pairing Knife
Bread Knife
SteelThey don't seem to sell that particular set online anywhere but think the set cost upwards of £60 when new, looking for £30 ish?

We've got a few Global knives and a Minosharp 3 that does a fair enough job at sharpening but I want to take a step up and learn how to make my knives really sharp.
I'm seeing a fair bit of variety in terms of advice on how best to do this. Everybody seems to recommend a different stone and/or ceramic steel. Different techniques etc.
I'd really appreciate hearing a few personal experiences. What did you buy, how long did it take you to master and what are the results like?
-
• #2247
I bought my stone five years ago and it's still in the box, unused... Our sharpening class at Le Reej was ace tho', even if it did turn into a bit of a piss up...

Beer, knives, South London. What could go wrong?

I use the Tog Ceramic Steel to hone my knives
Have been impressed by it, pretty simple to use if you watch a few videos.
I'm tempted to get a stone later this year but don't exactly need one!

I suppose that a good steel for honing might be all that is needed to take the sharpness to the next level. I'm currently stropping after putting through the Minosharp.
Few people forging knives in the old workshops where cutlery used to be made in Sheffield. 2 knives on the way for me, will report back in a couple of weeks
