Cut it into smaller pieces and eat steak today and tomorrow.

Reverse sear
Warm at 100C until core temp is 10 degrees below the temp for how you like your steak .
Leave to stand while you stoke flames to full white hot coals and sear the fuck out of it for 30-45 seconds per side. -

Well I fucked that up.
Got distracted halfway through with toddler issues and was rewarded with a grey lump. Pretty pissed off. Good flavour (dry rub with demerera, paprika, all spice, salt, pepper, rosemary before sear). Resting seemed to salvage some moisture but I'm certainly not getting some lovely rare sarnies tomorrow.
Will placate myself with chocolate and chestnut torte.

I chucked out a whole load of old triathlon magazines yesterday, but saved the recipe pages.
This has led to triathlon food week - last night was green bean, halloumi and potato salad.
Tonight is Bengali split pea curry with caramelised shallots. It's costing me a bit more than my usual pizza / soup / salad, but it's been nice so far!

I've been on a bread and cheese-free diet since realising how much weight I'd put on on my honeymoon in Italy.
