I'm not trying to go full-on weight weenie so will use what I have where it's good enough. I think I've settled on a plan that would only cost about £1k net and would get the bike to a very respectable 7.2kg. would be contingent on finding RED for £1k though
in the meantime, I'm moving house so this plan might have to sit on the shelf for the next 4-6 weeks

If the claimed weights are accurate, and as long as you don't use things like air in the tyres (~20g), cables (~120g), handlebar tape (~40g), computer mount (~40g). QR skewers are never included in even claimed wheel weights, so there's another 50-100g even for light ones. If I only included things in your list, my 6.85kg bike would only be 6.48kg :)
