If newer is on the agenda, the 790 KTM looks a proper giggle. I luuurve the sound of triples...I'd totally have a stripped down Daytona as a second bike for the occasional thrash if I had a bigger wallet / garage.
RC51 is a decent shout - they're beautifully put together and are at the point you can't lose money on them short of putting it in a ditch.
Don't know about UK prices but late model Aprilia RSV and Tuono twins are amazingly good and silly value here. They are absolutely beautiful bikes to ride - my friend's 09 Tuono is the most pleasing all around, loony tool I've ridden in ages. The frame is a thing of real beauty and the rotax engine is an absolute peach. He paid $4k!
