Since I recently read about cooking sweet potatoes cut in half, lightly oiled and salted all over and cooked cut side down on a baking sheet for 40-45 mins at 180-200 I don't think I'd cook them any other way. all the juices caramelise on the cut end, they get super soft all the way through and the skins crisp up like proper jacket potatoes. lovely and well worth the effort.
