Another probably stupid question, if your property is freehold, not shared freehold, just freehold, who owns the land?

You do, as much as anyone does - there is no superior interest but if you managed to disclaim the freehold somehow it would become bona vacantia (i.e. defaults back to the crown)

So basically, if you have a freehold property and if you were mortgage free, then nobody could make you homeless then?
