They usually run the tyres at least 20psi too high.
Even at BPW it’s rare that they’ll set the air sprigs to the customer’s weight.
I think they assume that if they customer knows it needs to done, the customer will do it, and if they don’t know it needs to done, the customer won’t notice anyway. Which is probably true.

Those same sized Maxxis Ardents work well for me at 24 psi front & 29-30 psi rear. I'd start from about there.

my method (don't do this):
- take air out until tire is fun and squishy
- do a lap
- if you didn't hit the rim, take a smidge more air out
- repeat till you hit the rim and need a wheel rebuild
- take air out until tire is fun and squishy

Single ply or Dual ply tyres ?
Used to race there (BPW) when it was a Dragon downhill track.
Dual ply tyres, 20-25 up front and 25-30psi out back. i am around target weight (maybe a bit lighter then, but add on fullface, and lots of body armour :)Single ply tyres used to blow out in the rock garden = near death

1.1kg when I was racing, some around 1.5, Intense used to do a 4ply supermegaduty around 2kg :)

Is the frame of the Scalpel SE 2 different to the SE 1? Looking at the geometry for both there are differences, but it's not clear whether they are caused purely by the different forks (on the L).

Set the recommended air pressures first.
Then set the rebound and compression in the middle of whatever adjustment they have ( in your fork's case, I'd leave the compression setting on 'open' ), and make one small change at a time, whether to air pressure, or rebound. The rebound won't be too far off the middle setting, if you have the correct spring rate. You'll then be able to tweak it to whatever type of trail you're riding.
Then find either a long flight of steps, or a bumpy/rocky/rooty downhill section of trail, and keep repeating it, over and over; trying a slightly different setting or air pressure on each run.
