Don't get me wrong, there's brilliant cycling in Hong Kong but it's easy to get bored. Get off the island as much as you can. Catching the sunrise at Sai Kung Country Park is pretty special but then bikes are banned after 8am because Hong Kong.
Taiwan and northern Thailand are a short flight and have endless options. And (I think) better food.
