It means the rail sits further down from the tip of the hook. If that turns out to be not secure enough I'll get a second hook like the Gravel panniers use:
Well that's a bit clever. I think you've sold me on the pizza rack.
I ended up putting a bungee cord round them for off road but if you're not going on anything that's too bumpy just order the extra hook
