I've just had a look at the same spyres on a stock bike and they have a wider gap definately - so it might be a rotor issue - and yep there is a bit of adjustment in the adjusters before the stop so they are not threadlocked - I will get some vernier calipers on the rotors and see if that's it

vaguely recall someone talking about cheap disc brake pads. I have a shimano flatmount rear and post mount front and want some new pads. Any recommendations?

SRAM Rival; Losing fluid at the caliper end, where the cable goes into the brake.
Not torqued up the bolt enough?Where do you even get a torque wrench with a spanner head?!

I paid £60 an end for BR-M655 when they'd been out for a while, and that was a reasonable price at the time. You can buy M7000 for £124 at Merlin so they've not gone up in price, not sure why Deore would go up.

SLX? I sold mine for 35 when they were at 45 RRP.
And I sold a XT a month ago for 70 without checking the current price...
Both new and should have kept them!

Recent ride has convinced me to abandon disc brakes. My rear Lyra Tektro has crumbled inside, had it been the front I'd have been in trouble. Constant pressure on a long descent, a sudden click and now it won't actuate.
My front, which I upgraded to a TRP sprye, has always been a bit shit, got steadily worse during the ride, which was very wet / muddy. Just given it a full strip down and de-grease, and with the lever held super tight, I can still turn the front wheel.

Spyres on my commuter after a winters abuse are now ok. Spyres on my caad12 with DA cables and icetech rotors are simply brilliant
Well, there may or may not be a problem. The first and most likely explanation is that the brake is designed to run a very tight tolerance. Companies sometimes make this decision because it affects lever feel or 'mechanical advantage'. This however makes the brake hard to set up. Hope are often criticised for this.
On the other hand, we could could assume there is an issue. I notice that TRP make specific Spyre rotors. Perhaps these are thinner than the ones you are using. Another possibility is that - as you suggest - the adjustment screws have been drowned in thread lock and need some persuasion. However, if you're able to turn the screws to a certain point and then they seem to stop, it's not a thread lock issue. Don't force then of you'll round the hex hole.
