Do higher wattage irons just heat up more quickly and retain it better, or are there other advantages?
I'll be soft soldering with a lead-free solder.
They can put more heat into the things being soldered, i.e 0.5mm cable small iron, 6mm cable larger wattage iron. With the larger cable heat escapes quicker than it can be supplied, therefore never gets hot enough to melt the solder correctly.
