I looked into these a while back. There's some beautiful cameras from that era..
In the end I decided against going that route, the major reasons were
a) while being rather cheap cameras that age will most likely need a complete CLA at least
b) dim / old / small finders - if any at all
c) narrow range of shutter speeds & slow glass
Wouldn't worry too much about the lens speed. The fastest on any of the Mamiya 7 lenses is f4, and 3.5 on the 75mm Mamiya 6. Aperture is different on medium format anyway.
That's what you're going to get on a hand held medium format rangefinder.
