The largest 3 sprockets on 105 cassettes are fixed together, so in order to have a cassette without any large jumps in tooth size, you'll have to leave off the smallest (11/12T) sprocket.

You might need to space the remaining sprocket out in order to put the recommended torque on the cassette lockring.
Possibly the wrong thread but hopefully someone can advise: looking to put a 11 speed cassette minus a cog, on my 10 speed free hub. Both cassettes are shimano so think it would just be a spacing issue. I've seen online people doing this with the ultegra/DA I was wondering if there should be any issue doing it with a 105 11 speed cassette?
