Got given a Seiko 4205 and the stem is broken. Am I right in saying that all I need to do is buy a replacement crown and stem and pop out the old one out by pressing this button?

Yes.
Be very gentle when popping that button, not sure about Seiko movements but on some movements its possible to basically completely disassemble your keyless works if you push it too far in. It is recoverable but it was the bane of my life when learning to service movements.
Just tug on the crown whilst increasing pressure on that button.
You might be able to remove the crown from the stem to fit to a new one if you use a pin vice...

As above, but be gentle, and you may need to wiggle the stem a little to get the sweet spot. Sounds silly but if it's not working, swap hands, (movement in the left hand stem in the right, or movement in the right hand stem in the left). Sometimes it's an angle/pressure thing.

You need a 351420 stem which is £2.20 from Cousins.
To save you registering, would be happy to order one for you on my account.
Edit: you'll probably have to cut it to size to match the old stem.

would anyone have any info (i.e. movement, price etc) on this Baume et Mercier 8749 Hampton Square Watch. I cant find anything useful on the web but my colleague is selling it for £900 - is that reasonable?

Are you sure that is the correct model number?
I can't find the exact one but there are a fair few on chrono24 for more than £900 that don't have the big date or subdial.

So I went over to have a look at the watch and its very nice. There is an oval-ish window on the back where you can see the rotor and it has "BM 11651 21 Jewels" etched. It also has "Swiss 200M 65590 Dual Time" on the back. Does this info help? -
